Follow this through once and an ordinary Karnataka hotel stops being intimidating.

The server will list items fast and without pausing. Do not panic — ಮತ್ತೊಮ್ಮೆ ಹೇಳಿ works perfectly here, and the list is short and repetitive. Most Karnataka tiffin menus are the same eight items.

ಕೂತ್ಕೊಳ್ಳಿ is the heavily contracted spoken form of ಕುಳಿತುಕೊಳ್ಳಿ. You will hear the contraction far more often than the full form.

Chutney and sambar refills are free at almost every Karnataka tiffin place, and asking is completely normal. Servers will often top you up without being asked. Saying ಸಾಕು with a hand over the plate is how you stop them.

Complaints in Karnataka work best delivered calmly and quietly. Raising your voice in a hotel loses you sympathy from everyone including other diners. ಇದು ತಣ್ಣಗಾಗಿದೆ, ಬದಲಾಯಿಸಿ ಕೊಡ್ತೀರಾ? said evenly almost always gets a fresh plate without argument.

Tipping is modest and not obligatory in Karnataka. At a darshini nobody tips. At a sit-down hotel, rounding up or leaving ten to twenty rupees is normal, and ಚಿಲ್ಲರೆ ಇಟ್ಕೊಳ್ಳಿ is how you say it. Upscale restaurants often add a service charge already.

Pronunciation Tips
  1. ಎಷ್ಟಾಯ್ತು fuses two words into one. Say it as a single unit.
  2. ಕೂತ್ಕೊಳ್ಳಿ has a doubled retroflex ಳ. It is contracted and fast.
  3. ತಣ್ಣಗಾಗಿದೆ has a doubled retroflex ಣ — slow down on it.
  4. ಉಪ್ಪಿಟ್ಟು has two doubled consonants. ‘Up-pit-tu’.
  5. Servers speak fast. ಮತ್ತೊಮ್ಮೆ ಹೇಳಿ is your friend and nobody minds.
Common Mistakes
  • Waiting for a menu at a tiffin place. Many have a board on the wall and no printed menu. Ask ಏನೇನು ಸಿಗುತ್ತೆ?.
  • Complaining loudly. Calm and quiet gets a better result in Karnataka.
  • Over-tipping. Ten to twenty rupees at a hotel is normal. Large tips create awkwardness.
  • Assuming refills cost extra. Chutney, sambar and water are free at almost every tiffin place.
  • Ordering ಊಟ at breakfast time. Rice meals start around noon. Before that it is ತಿಂಡಿ.
Cultural Note — Karnataka Hotel Culture

The old Karnataka tiffin hotels — MTR and CTR in Bengaluru, the Mylari places in Mysuru, Vidyarthi Bhavan in Basavanagudi — are institutions with rules. Some do not take reservations, some serve only certain items after certain hours, and Vidyarthi Bhavan’s benne dose has a queue that regulars accept without complaint.

Service is fast and functional rather than attentive. A server who takes your order in ten seconds and brings food in three minutes is not being brusque; efficiency is the point. Lingering over a table when others are waiting is more noticeable than anything you might say.

Filter coffee is the closing ritual. It arrives in a steel tumbler and davara, hot enough to need the pour-between technique to cool. Refusing it in a place that takes its coffee seriously is a small disappointment, and asking for it without sugar must be specified up front.

Practice
  1. Order a full tiffin meal in Kannada without switching to English.
  2. Ask ಏನೇನು ಸಿಗುತ್ತೆ? and catch at least four items.
  3. Practise a calm complaint: ಇದು ತಣ್ಣಗಾಗಿದೆ, ಬದಲಾಯಿಸಿ ಕೊಡ್ತೀರಾ?
  4. Ask for a chutney refill using ಸ್ವಲ್ಪ ಚಟ್ನಿ ಕೊಡಿ.
